I was wondering what exactly is a capacitor and what does it do?
I've heard of people getting a cap when they get big amps, but what purpose does it serve?

Caps on amp help take strain off the alternator and give the amp the power the second you key up. Pictiure this. When you key up, your amps (in this example) in the trunk, the alternator is under the hood. So the current has to flow all the way back to the amp. However a cap stores power, so right when you key, the powers at the amp. Caps charge and discharge very quicky.
Caps however need to be wired right! Ive seen to many times caps not hooked up right. People hook them up like stereo amps. The best way to hook one up for communications is, through a T connector. Theres a input. Then on one side of the T is your amp, on the other the cap. The reason this is best, is so if your long winded and the caps discharged, the current will flow directly from the other side of the T allowing the cap to recharge. Dont just run a cap in line with your amp. This is not the best way for communications.
If your not doing big watts many of the times you'll notice no difference with a cap. But they never hurt if wired right.
